La alubia pocha es en realidad una variedad de la alubia blanca con la particularidad de que se consumen antes de que se madure por completo. Precisamente por esto la vaina presenta un color pálido antes de su recolección, pero eso no le resta sabor y exquisitez al producto final.

The pocha bean is actually a variety of the white bean with the particularity that they are consumed before they are fully ripe. It is precisely for this reason that the pods have a pale colour before they are harvested, but this does not detract from the flavour and exquisiteness of the final product.
